Reactive Mixing Bowls
The first thing to consider that whether to use a reactive bowl or non-reactive bowl. A reactive bowl made of some material that can chemically react with the ingredient which places in the bowl. The foods can be mixed with a foul metallic taste, lose flavor, change color or permanently stain or odorize the mixing bowl. Usually, high acidic foods such as citrus, tomatoes, tomato-based souses and vinegar have this outcome in a reactive bowl.
Copper, cast iron, aluminum, and some steel are re-active materials. Stainless steel can resist reaction of acidic foods but not 100%.
Bowls for Marinating
Generally, marinades have only one ingredient which can interact with a reactive bowl. Therefore, ceramic or glass is the best. You can also use something with a lid as a plastic wrap that sometimes refuses to stick and aluminum foil is also reactive so it should be avoided.
Whipping egg whites
For this purpose, just purchase one small copper bowl. Actually, copper ions help the eggs whites to stiffen and peak. French chefs prefer to use copper made bowls on a regular basis. Otherwise, you can use ceramic or stainless steel too. Keep in mind, don’t use the glass made bowls. The sides of the bowls are too slippery and you won’t get the exact density.
Acidic foods
The main acidic foods are citrus, tomato, and vinegar based sauces. Do not use a reactive bowl for mixing them. Those can take the taste of the material or can permanently stain the bowl. Therefore, you can use ceramic, glass or some stainless steel made bowls. Also, avoid aluminum foil with this food as it is reactive.
Whipping foods
Use a non-metal bowl to whipping foods like cream, butter or potatoes. Metal-based bowls can contribute metallic taste to these foods. A tiny shaving can infect the food.
Fruits
Fruits are very absorbent. They can take any kind of foods flavor which recently left from the bowl or the material of the bowl. So try to store them in a ceramic or glass made bowl.
Vinegar
As we mentioned, vinegar is an acidic food. So try store vinegar based dressing or extra dressing in ceramic or glassware. If you want to use a bowl for mixing or shake dressing for 5 minutes, then you can use plastic made bowls. Then store them in a glass container.
Oils
Try to use a non-reactive and non-stain bowl as ceramic, glass and some stainless steel as well.
Batters and Dough
Fundamentally you can mix flour in any material made bowls as long as it doesn’t contain acidic ingredients. While mixing, use a high sided bowl which will prevent the dreaded flour bomb.
